These are my second attempt at making my own RPs (first was years ago). I only made a few as a sort of 'test drive' but they turned out so well, even if I say so myself.

I used Maris Pipers, a little salt and beef dripping.

Sorry, couldn't resist bragging as I was expecting disappointment.

Thankyou all. I'll reheat the rest (I've already sampled one) and have with my pie tonight.

BTW, I'm still happy to cheat with Yorkshire puddings and buy the nice ones from Morrison's.

Great , animal fats allow you to use the higher temps. without burning the fat .

Yes, I usually use dripping, or ghee.

Two smallish Maris Pipers peeled and quartered. Put in a pan of salted water, brought up to a rolling boil and left to boil for 2 minutes. Drained, shaken in the pan. I heated the baking tray in the oven, added the dripping (might have used a little too much) and back in the oven until it melted. Potatoes in, stirred around and covered in the dripping then roast at Gas 6 for just over an hour. Every 20 minutes I took them out of the oven to turn and baste for even cooking. Nice and crunchy out, fluffy and properly cooked in. I couldn't have hoped for a better result.
