Are they going to cancel my order

I bought a mattress on the Black Friday deals and it was the last one. I didn’t have the funds to pay for it until the following day so they put my order on hold until I had the funds. Between then and being payed the item went out of stock.
Since being payed my order is showing as “order received”. The mattresses are back in stock at the full price.

If they allowed you to pay the offer price the following day then you should also expect to receive the item at that price.

Phone them and asked. You ordered it at the black friday price.

They no longer have any of the mattresses available for the price that I ordered it at. So I’ve got to pay full price

Did you do this online, over the phone, or in person at a store, and who agreed you could pay the following day?

So they aren't forfilling the original agreement, but you've already paid. I would have thought they would need to honour that or refund you in full.
Can you do a charge back on your card?

Sounds like you didn’t actually purchase the item. You asked them to hold it for you until you had the money and they said they would. But they didn’t hold it - they sold it to someone else. Which is just tough really.

Oh that's so annoying. Have you had a look round other places online to see if they have a similar priced mattress?
