What’s your favourite easy mid week meal?

I’m sure I’m not alone, but we’ve fallen into a rut of eating the same meals every week. We do our meal plan Sunday and it’s always bolognese, fajitas, some kind of ramen… we’re bored of it.

I’d love to hear your favourite mid week meals for inspiration?

Chicken thigh traybake. Add peppers, quartered onions, courgettes, tomatoes to the pan with whole garlic and olive oil. Roast. Make up some couscous to serve it with. 10 mins prep max.

Pulled pork in slow cooker - I do a spicy dry rub then a bit of BBQ or hot sauce in bottom slow cooker and a sliced onion and cook it all day. Serve with buns, sweet potato fries and corn or whatever really.

Instead of making everything from scratch I use frozen roast potatoes and prepared veg and either pork chops or chicken breasts. Stick the meat and potatoes and Yorkshire's in the oven and the veg in a steamer and it is all ready in 30 minutesGrin

We call it Cheat Roast :) Chicken breast poached in gravy is a fave.

My slow cooker is my best friend at this time of year.

Bolognaise, chillies, curries, casseroles, thick chunky soups, pasta sauces - not necessarily just meat, but veggie as well.

Means i can chuck it all in in the morning and only have to cook the rice / pasta / spuds / veg etc. Also useful if there’s a ‘warm’ function to keep things warm if kids are at training / late from work and so on.

Pasta tossed with creme fraiche and the juice and finely grated rind of a lemon. Add smoked salmon ribbons just before you serve. You can also cook some peas along with the pasta if you like.

Carton of pre-made mashed potato.
Add either cooked bacon bits or some diced Salmon/smoked salmon.
Add spring onion if you like. Plus a good pinch of pepper. Mix and shape into patties. Either 15 min in air fryer tray or 20 min in the oven, either way on baking paper.
Serve with couscous (Ainsley Harriott flavoured pack?) and veg

This week, some of our quick meals will be burgers and oven chips with corn on the cob and filled pasta with sauce & garlic bread. A favourite that's easy to do is to bang a whole chicken in the oven (I WFH) and serve it with salad, baguette and cous cous. Left over chicken can then go into a pie for another night. Can also do that with a ham and then make mac and cheese or ham, egg and chips another night.

Fish, a salmon fillet cooks in 15 mins, while that is in the oven (small microwave convection which heats up really quickly) I can either cook noodles and steamed veg or rice or new potatoes.

Omelette and salad.

Minestrone soup takes 30 mins and a crusty roll out of the freezer.

Pasta with cherry tomatoes, garlic, chilli, king prawns and parmesan.

Gnocchi with an easy tomato sauce then baked in the oven with mozzarella

Or our favourite is pasta with anchovies, garlic, chilli flakes, olive oil and Parmesan

Melt 30g butter in a pan, then add 3/4 cup of panko breadcrumbs and 15 g of season all (or any seasoning you want) mix all in. Take a few chicken breasts and cut into strips (or buy the tenders) dip one side of the tender into sour cream and then in the breadcrumb, assemble onto a baking sheet (breadcrumb side up) and cook at 200 for 18 minutes. So delicious and juicy. I throw in some wedges or skin on fries into air fried and serve it all with a salad of some sort. Easy dinner in less than 30 mins

Sausage eggs beans and chips

Couscous made with oxo cube add leftover meat from a roast and fry up a little spinach, peppers onion and mix it all together

Burgers (mince onion garlic red pepper kidney beans egg) in a shop bought bun with a slice of cheese, tomato and lettuce or spinach sometimes a bit of avocado

Rice with leftover meat from roast

Spinach soup

Red cabbage, beetroot, red onion salad sprinkled with vinegar add with diced beef

Sweet potato fries and coleslaw

Spaghetti, philly, stock cube, pasta water, chopped smoked salmon or frozen prawns, broccoli.

You can substitute philly for tinned toms, herbs and chilli flakes.

Chicken Caesar salad with garlic bread.

Carbonara from scratch is super quick.
