Recommendations - short break with newborn

Would really welcome suggestions:
I'm expecting my first baby end Jan and DPs would like to take us away with my DB, SIL and their 3 kids for a few days at Easter or May Bank hols.

Initially she thought Spain for some sun. We'd need to be confident in having a passport for the baby in time. Is that realistic?

Uk-wise she's looked at Centerparcs and glamping but so far it doesn't look madly appealing to me. Any suggestions? They have cars, we don't. Could hire if necessary.

It should take about 3 weeks to get a passport with the standard service if you complete the form properly and sent the correct documents.
Go somewhere with a spa so you can make the most of the free childcare that the grandparents will hopefully give you at some point in your trip!

Thanks! NHS website says vaccines at 8, 12 and 16 weeks. Is it reasonable for me to take the baby overseas before it's had the 16 week (poss also before the 12 week)?

First you need to register the baby for birth certificate and then apply for the passport. In our local registry office the waiting time was about 2 weeks. Then waiting for the passport for another few weeks so you are looking at about 5 weeks minimum unless your registry office is quiet.
Personally I wouldn't take a baby out of the country without vaccinations. When we did ours last year I asked the nurse about taking our DD abroad and she recommended to complete all vaccines before doing so.
