How do you make your chilli really tasty?

Mine always seems a bit bland.

I soften diced onion, garlic, chopped pepper. Add mince and brown. Tin tomatos, oxo cube (my mum always did....) kidney beans, chilli powder. Simmer. What am I missing?

Yes chipotle paste, tomato puree, a teaspoon of cocoa powder. You need to add umami.

You have no spices!

Use Mexican mixed spices, taco seasoning, your own blend of cumin / chipotle / paprika / parsley / chili etc.

Add a tablespoon of unsweetened cocoa powder.

Add a splash of Worcestershire sauce.

let it cooking over a low heat for a long, long time.

Add a run if kidney beans.

I use something like a brisket really slow cooked - 6/7/8 hours in the oven, low. No peppers (are you supposed to put peppers in? I never do!), loads of cumin and coriander seeds ground in at the beginning and a lot of spices, loads of onion. Cinnamon stick a bit later on too. Really good quality stock. Beans go in at the end with fresh coriander stirred through before serving.
Obviously other steps in there too but these are the things that jumped out at me that you don’t put in yours but I feel makes mine really tasty. Either a bit of chocolate or tequila in at the end, I don’t ever use both.

I always include green chilis as well as Chili powder, dried Mexican oregano, ground cumin, ground coriander, and a tablespoon of cocoa powder.

For the mince, have it ground less fine than the prepackaged stuff or just dice a chunk of meat yourself. Start off by browning it, then taking it out again and adding the onion etc. Sweat spices (add cumin and coriander, smoked paprika, dried peppers, also tomato paste!) with the diced onion. Guiness or other dark beer is great for flavour. Concur on cocoa but take it slowly.

Cumin is an absolute must.

Chocolate/cocoa powder, smoked paprika, tomato purée, chipotle, lemon or lime etc make it even better but the cumin is a foundation that you can’t skip.
