How do you make your chilli really tasty?

Mine always seems a bit bland.

I soften diced onion, garlic, chopped pepper. Add mince and brown. Tin tomatos, oxo cube (my mum always did....) kidney beans, chilli powder. Simmer. What am I missing?

500g Minced beef
1 fixed Onion
1 chopped Green pepper
1 tin Tomatoes
1 tin Kidney beans

Plus

1 tsp hot chilli powder (more if you like it hot)
1 tsp cumin
1 tsp paprika
2 garlic cloves
Tomato purée
100 mls milk
Beef stock cube
Salt
Pepper

I add cumin, chilli powder, hot paprika to mine, along with the usual mince, stockcube, tomato paste and chopped tomatoes ( I tend to get tomatoes with garlic and onion so the kids don't notice the onion in it) . I use baked beans as DH doesn't like kidney beans so add more a bit more spice to counter the sweet tomato sauce. I cook everything for a while and add the beans in at the end.

Ketchup instead of tomato puree then a splash of red wine after that has cooked out for a minute.

Are you adding chilli at the end or near the beginning? To bring out the flavour of the chilli itself it needs to be cooked in oil or fat. If you are adding it at the end once the liquid is all in, you aren't getting the full impact of the chilli, just the thin burny heat. Also, as pp suggested, back fill with smoked paprika or cumin for richness. Cook for hours.

You need to add tomato purée, ground coriander, cumin, smoked paprika, dark chocolate to yours.

ODFox is correct,you have to sweat the onions,add all your spices then, before any other ingredients. I grow my own chillis,you can do that in a window sill. You don't need anything fancy, I start mine off in a north facing kitchen window, and they blow your head off!

Cumin, smoked paprika and a little bit of ground cloves. The real key is to cook it slowly for a long time though. Once it's bubbling, I put it in the oven with no lid on for a few hours.

Cumin like others have said is essential. I use stewing beef rather than minced beef. Low and slow.
