How do you make your chilli really tasty?

Mine always seems a bit bland.

I soften diced onion, garlic, chopped pepper. Add mince and brown. Tin tomatos, oxo cube (my mum always did....) kidney beans, chilli powder. Simmer. What am I missing?

Plain chocolate - I use a chilli plain chocolate and I put fajita mix in too.

Low and slow to evaporate and condense it.

I use some onion and garlic powder to intensify the flavour and a a teaspoon of cocoa powder gives it a deep flavour.

Chocolate was used in the earliest chilli recipes and it works.

I also sometimes don't add chilli at all as the flavour doesn't need it and some children struggle with spicy food. I will add it in for adults.

I think fresh chilli is a have changer. And red wine. For you, not the chilli.

Celery salt
Worcestershire Sauce
Balsamic vinegar.

I used to add mushroom ketchup, but struggle to find it at the moment.

I dry fry the mince (15-20% steak mince, occasionally with some lamb mince too).
Put onion, garlic, red/green peppers and coriander into a food processor. Blitz to a paste. Add to browned mince.
Throw in cumin, oregano, chilli (or a sachet of taco seasoning), a beef stock cube.
Add a tin of tomatoes, tin of kidney beans, tin of cannellini.
Cook in low oven for 4 hours.

Chorizo. Chopped up and fried with the onions. I also put in coriander, cumin and cinnamon. I use Lloyd Grossman's tomato and chili pasta sauce, and a few squirts of sweet chilli sauce. And let it simmer for a good half hour before serving.

I also add paprika, cumin, salt and pepper. Make sure you’ve put lots of garlic in and simmer for an hour or so before serving. Tastes even better the next day after cooking too.

The spices need to go in before anything liquid/tomatoes. I use fresh chilli and chilli powder or chipotle paste, and dried ancho chilli flakes, ground cumin, ground coriander, smoked paprika, after you've browned mince, softened onion peppers and garlic, I also add fairly finely diced mushrooms for umami (finely diced because DH says he doesn't like them, except I put mushrooms in nearly everything and he doesn't realise) cook the spices out then add stock cube (kallo), tomato puree and tinned tomatoes with a pinch of sugar as well as salt and pepper, then a few squares of very high cocoa chocolate. Add some water then cook on a low heat for hours, adding water if needed, kidney beans in about half an hour before the end and some fresh oregano right at the end.

Haven't RTWT so sorry if it's been mentioned but how long do you simmer for? I would personally brown the meat, add the toms, beans and all spices etc and then simmer for at least an hour before adding the softened veg for the last 10/15 mins (I do it this way so the veg doesn't completely disintegrate but the length of time simmering is needed IMO to bring the richness of the flavours out).

Cumin
Spoon of marmite
Tabasco
Worcester sauce
Smoked paprika
Fresh chillies softened with the onion etc as well as chilli powder/flakes.

I also use one of those tubes of minced garlic and add a squirt of that five mins before the end for extra garlicky flavour!

You need more spices than just chilli powder.
For a proper chilli you need chilli powder, paprika, cumin, oregano, garlic granules/powder and black pepper.

The BBC Good Food magazine has a foolproof chilli recipe. After softening the onions and peppers you add the chilli powder, cumin and paprika and 'dry' fry before adding everything else.
