Easy weekday family meals

I'm doing the shopping and bored of all our usual options - what are your favourite easy weekday family meals? Meat/veggie all welcome!

Stir fry, usually chicken with heaps of veg and chunky noodles. Quick and easy which is great as I hate cooking😆

I make lentil soup once a week and that does a couple of meals.
Tonight I'm making potatoes, sausages in onion gravy and veg.
I love home made lasagne too but it is a bit of a faff to make.

this week we are having chicken tortillas (got this from a Nigella book I think), cottage pie,
chicken tarragon with jacket spuds and greens, butternut squash & leek soup (I make a large batch then freeze 2/3rds, its like a bowl of sunshine on a cold day), home-made pizzas. All fairly quick and easy.

I do stir fry but with tofu and rice, can then have leftovers.

Veggie lasagne which I freeze.

I’m a recent convert to the Pinch of Nom books (shit name, great recipes).

I made the channa masala last night. The easiest recipe in the world and it was bloody epic. I often find chickpea curries get a bit bland or watery, but this was delicious.

Tortellini and pesto (max easy, for the busiest nights)

Mackerel / tuna pasta (tinned fish, tin tomatoes / veg or jar of pasta sauce)

Quiche or pie, new potatoes and veg

Omelette and veg (usually garlic green beans), with new potatoes or chips

Baked salmon pieces, with various things on top (korma or tikka paste mixed with yoghurt oil lemon juice, or herbs lemon butter oil garlic, or just a squeeze of lemon and some seasoning, or oyster sauce with garlic and ginger). Serve with brown or white rice and fresh veg

Or any as above with fish cakes, breaded fish, chicken thighs, etc.

Sausages and mash and beans

Baked potatoes and salad and whatever to go in them

Stir fry

Fish or veg or chicken curry - can be super quick with just the stuff and the sauce tipped over and made hot, and plain rice (sad) or can take lots more time and fry up lots of onions, veg, use nice pastes, simmer for ages etc, and do v nicely cooked rice with onion and spices etc, with lots of good things on the side.

I have made quite a few recipes from Ciara Atwell's book the Fuss Free Family Cookbook - the recipes are easy to tweak for two of my fussier kids.

Cajun mince. It’s a Taming Twins recipe, I put less peppers in and you can adjust the quality Cajun spice if you don’t want it too spicy.

Pasta with Boursin and tomatoes.
Put either tins of cherry tomatoes or fresh, chopped red onion, Boursin cheese, fresh basil, in an oven proof dish and cook for 20 mins. Cook whichever pasta you like. Stir the tomatoes and Boursin when you take it out of the oven and spoon over the pasta.

If kids like tuna then tuna fish pie with cheese sauce add mushrooms if liked.

Ratatouille then add cheese sauce and pasta shells, top with bacon, nice pasta bake.

Egg fried rice; I use sachets of rice, beaten eggs, mixture of veg and bean sprouts
Roast veg eg BNS / peppers/aubergine with goats cheese, halloumi or feta added at the end mixed with spinach and or some lentils or seeds
Dhal with rice or flat breads
Pasta with tuna and Tom sauce/ puttanesca/ nerano / Norma / carbonara/ pesto Liguria
Salmon with potatoes and veg
Sausages cooked with tinned beans or lentils
Liver with mash and onion gravy
Kedgeree
Any of the above can have salad or greens on the side

Birds Eye chicken Dippers out the freezer, jar of Uncle Bens Sweet and Sour Sauce, packet of microwave vegetable rice - crispy sweet and sour chicken, done in 20 minutes.
