Autumnal Veggie Traybake

Does anyone have any recommendations for an autumnal traybake recipe. Ideally vegetarian or with fish?

Hosting at the weekend and trying to think of something easy and comforting.

I didn't exactly follow it. Instead I cut some pumpkin, carrots, suede and red onion and sprinkled with olive oil, finely chopped garlic, chilli (we normally use scotch bonnet), rosemary and salt.

Roasted in the oven until soft and slightly brown around the edges. Tasted great as a side dish.

Thank you! we did one yesterday with slices of butternut squash, onions, sage, chicken, bacon and topped with sourdough chunks and sage.

Think we may do something similar just omitting the chicken and bacon
