Would you use sea bass which is one day past its use by?

I find fish to be strong smelling anyway so worried my sniff test will be off!

I wouldn't - but you could sniff it and see, if it has a strong non fresh smell I would bin it.

As Long as it has been in your fridge all the time, unopened, I would

Rinse it under water and see if it still smells. When stuff is wrapped in plastic it does something ( Jamie Oliver explained once!) that makes it smellier than if kept dry under two cold plates in the fridge.

1 day past, yes I would unless I thought my fridge didn't work very well. But to be honest I go by whether I can fancy what ever it is if not I'd bin it. I kind of think you have these instincts for a reason.

Bass lasts better than a lot of fish (mackerel for example) so long as it's been kept cold. Bare in mind, unless you've bought it from the boat it will be a day or two old before it hits the shop. If it's net caught rather than line caught, add an extra day.
