Can I make a mini individual cheesecake type dessert from these ingredients?

A lot of recipes I see online call for cream which I don't have but I just really fancy that cheesecake type dessert tonight as a treat.

I have butter, digestive biscuits, icing sugar, full fat cream cheese, vanilla extract, jam and berries.

Can it be done and if so, can anyone recommend quantities for the cream cheese /icing sugar? I will be re using one of the little GU glass pots as an idea of size.

Can definitely be done. I’d mix 100g cream cheese with 1tblsp icing sugar and half a tsp of vanilla

Yeah, it would work, do you have a bit of lemon juice for some extra sharpness? I'm no good on quantities I'm afraid, more of a bit of this but if that cook.

If you have a lemon and a tin of condensed milk lurking in the baking cupboard it can also work tremendously without cream.

I think the ingredients you have sound great. Could you do it as a ‘parfait’ or layered so that quantities don’t matter so much (also saves trouble if making a biscuit base)

I might whip some milk (a tbsp or 2) into the cream cheese with a spoonful of icing sugar to lighten the texture and then layer with crushed digestives, thinned jam & the berries. A little lemon zest/juice would be nice too if you have it
