Help a gal out!!! Healthy meals

I've lost the plot with dinners, busy tired hectic bla bla bla.

Been relying on freezer food/ready meals too much.

I want to regain some routine and a nice evening.

I work from home 3/4 days per week so looking for something I could potentially do in the slow cooker or stick in an oven dish and cook and it be ready for after school/work, easy enough to put leftovers in fridge or freezer etc.

Easy, healthy meals for 2 adults, 2 kids, something we can include some veg to bring the portions up!

Please share your easy healthy meals,
Preferably with ingredients and instructions too, I am not a natural cook Blush

I feel like if I could get like a weekly/for nightly menu plan in place it could work well.

What sort of things do your family like and not like?

There’s tons of easy slow cooker or quick & healthy meals but no point you getting a load of ones that no one in your family will fancy.

So what’s a crowd pleaser at your house? And what makes them pull faces?

We are quite open with most foods, we like fish, meat and veggie meals .

Pasta and rice dishes go down well!

Spag bol, pasta bake, chicken curry and salmon with rice are my go to dishes.

I like jacket potatoes, with beans (& cheese for those who like it).

Soup is easy - Jamie Oliver’s sweet potato & chorizo, or a curried butternut squash one are both full of veg, autumnal and delicious. For butternut squash soup I gently fry off diced onion and carrot, then add cubes of butternut squash, cover with stock (I use marigold bouillon powder, or a chicken or veg oxo cube). Let it cook for about half an hour til the veg smushes if you squash it against the side of the pan with a knife. Then take it off the heat, blend til smooth and add half a teaspoon of mild/medium curry powder. Serve with part-baked rolls warm from the oven.

Beef casserole in the slow cooker (diced beef, diced onion, just enough stock to cover the meat, squidge of garlic, squidge of tomato puree, sprinkle of mixed herbs, plus a bay leaf or some fresh thyme or winter savory if you have it, let it cook for about 6 hours on low, then use some cornflour to thicken the gravy). i usually serve it with mash, and peas/broccoli/carrots.

The maggi seasoning bags for chicken are nice too, and pretty easy, plus they usually have a suggestion on the packet of which carbs and veg to eat with it.

Slow cooker Chinese beef & broccoli?

Pulled pork in a slow cooker is a winner too - can use it loads of ways in buns or burritos or fajitas or just served with rice & sweetcorn. You can cook a whole chicken the same way to get shredded/pulled chicken too.

Any cut of meat that you like (pork chop, chicken thigh, drumsticks..) with a seasoning or marinade and roasted veg and/or corn on the cob.

Sausage tray bake - sausages, potato cut into small chunks, onion, cherry tomatoes, carrot chunks, olive oil, seasoning. All in one tray then in to the oven for about an hour or until it gets as brown and crispy as you like.

Taming Twins has loads of cheap, easy and fast meal plans on her website. I’ve not had a bad one yet, they are all delicious.

Second vote for Taming Twins, they are priced as well and she explains where she shops and the date a certain recipe cost x amount which I find really useful.

Never heard of the taming twins, I just had a look they look like lots of those would work too! Gonna do my food shop this weekend and get the slow cooker from the back of the cupboard Grin
