Lamb shank recipe ideas

I'm a competent cook, but last time I put them in the slow cooker, it turned into a stew. I have a minty coating I was going to use, but happy with other suggestions for your favourite recipes. Slow cooker, bake or other?

I love a roast lamb shank. Sprinkle some mint and/or rosemary over and wrap in foil. I make gravy using granules and a stock cube, add a spoonful of mint sauce and one of mint jelly, and a very generous glug of port, then add the juices from the lamb once cooked. Absolutely delicious.

Now I really want one. Dammit OP!!

I copied a dish I had in Paris and I like it

Fry off some onion in Le Creuset or similar. Add shanks and brown them a bit. Add flagelot beans and some sliced or chopped chorizo. Put in some stock - I use about 2 inch depth - and rosemary. Bring to the boil. Cover in foil and cook about 150 for 4 hours or so. Check after a couple of hours that it's not drying out.

Similar to the one above, we often make this. Delicious with buttery mash and greens.
I reckon are always better cooking it in a cast iron pot in a low oven. Slow cookers never work for me- the meat always seems to come out the texture of tinned tuna.

@Rewindthefilm @etmoietmoietmoi @WithIcePlease I ended up not doing the minty sauce I'd planned, but did a fusion of all the recipes you each mentioned. Turned out really well, thank you.
