Signal app - in what way am I "the product"

The Signal app is free and I know they ask for donations. It's meant to be more secure and private than Whatsapp and they say they don't collect info from your phone. But do they? How can I know whether they record my activities, keep images etc?

I thought it was set up by the people who created WhatsApp, but split with them over disagreements regarding the privacy route that WhatsApp were taking...but I can't honestly remember why I have that impression and could be wrong! DB is in tech and seems to think it's better that WhatsApp.

Their privacy and data agreement is on the app. Can copy paste if needed

We used it in the police as it more secure than WhatsApp or text.
We don’t send confidential information through it anyway but the boss might use it to send details of a meeting or that a job is about to kick off.
