A thread of ideas for the fridge food that would usually end up in the bin, todays challenge 2 pink lady apples!

Im getting really sick of fresh food waste. I have 3 teenage girls who aren’t necessarily fussy eaters however if they can’t open the fridge and there isn’t something ready made to grab they will declare there is nothing in the house and they also seem to think anything that is older than 2 days is inedible, especially fruit and veg.

Ive just opened the fridge for some milk and realised that we once again have stuff that if doesn’t get used in the next couple of days is going to end up in the bin so I’m on a mission to “recycle” the stuff that is in there and present it to my DD’s in a different way…

kinda like a teenage version of the hidden veg sauce I used to make when they are little to force some goodness into them!

Todays challenge 2 pink lady apples. (Nothing wrong with them just loose in the fridge so must be poisonous) and half a tub of plain Greek yogurt.

What can I make wise Mum-netters and does anyone else want to join in for inspiration?

Waldorf salad springs to mind! There are a bunch of recipes online, I think you will need some kind of nuts and celery to make it work.

A small portion of apple crumble with yoghurt on top!! Bonus if you still have some rhubarb in the garden

Slice, sauté till soft, add pancake batter, make apple pancake fritters. Serve with the yoghurt and a sprinkle of cinnamon.

Grated apple into porridge before you cook it is lovely

OfMiceandWomen · 09/10/2023 13:34

Overnight oats. Grate the apple and mix with the yoghurt and some porridge oats.

CMOTDibbler · 09/10/2023 13:43

Stir nutella into the yogurt, slice apples, makes a lovely dip. You can add some sprinkles to make it extra appealing

Add some thawed frozen fruit to chopped apple, top with yogurt, drizzle of honey and flaked almonds.

Shortpoet · 09/10/2023 16:02

Caramel apples. Cook them with a knob of butter and a spoonful of brown sugar.
not healthy, but delicious on plain yoghurt.

Cheese and grated apple sandwiches

LaCerbiatta · 09/10/2023 16:05

If there's nothing wrong with the apples why not just eat them? one today and one tomorrow? Eat the yoghurt for breakfast?

FatFilledTrottyPuss · 09/10/2023 16:07

Tarte tatin with the yogurt on the side with a drizzle of honey. 😋

QforCucumber · 09/10/2023 16:07

I also came to say the caramel apple cake above!

Puff pastry rolled out. brush pastry with strawberry jam. Thinly slice apples, fan on top prettily add some cinamon and sugar and cook in oven for 20 minutes.

Yep, no getting this, it's not food that needs a recipe like a celeriac or something.

MadMadMad · 09/10/2023 16:14

Pork, sage, onion and apple burgers. Add minced pork, sage and onion stuffing, finely chopped apple, tablespoon whole grain mustard, one egg and a spoonful of yogurt/mayonnaise for moisture- shape in to burgers and oven bake.

Millybob · 09/10/2023 16:16

My first thought was caramel apples with a dollop of yogurt.I would swap you that for the three black bananas in my fruit bowl - and before anyone says it, I'm sick to the back teeth of banana loaf. Also wonder about the economic sense in rescuing three bananas v turning the oven on for an hour.

FannyBawz · 09/10/2023 16:16

I always fry up old apples with pork chops, it’s delicious

KickingEAP · 09/10/2023 16:17

Are you supposed to keep apples in the fridge?

scrivette · 09/10/2023 16:20

Slice the apples and dip into the yoghurt - delicious.

Costacoffeeplease · 09/10/2023 16:22

Freeze the bananas and make ice cream, or more banana bread when you’ve got enough frozen bananas, and aren’t fed up of it

CheersToMe · 09/10/2023 16:23

Slice the apples.
Mix yoghurt with peanut butter to make a dip.
Dip.

BeyondMyWits · 09/10/2023 16:27

Slice apples , not too thinly, but like wedges.

Put in bowl.

Put bowl on table when kids are sat on their phones.

Like magic the apples will disappear.

ODFOx · 09/10/2023 16:35

Chop the apples and mix into stuffing to serve with pork.
Put a spoonful of brown sugar and some butter in the bottom of a microwaveable puddng bowl, top with a 2 egg sponge and microwave for 4 mins, rest for 2 then if it's still runny in the middle give it another blast. Serve with ice cream or custard. This one also works for ripe bananas.
Ripe bananas with brown sugar make an awesome toastie.
