A thread of ideas for the fridge food that would usually end up in the bin, todays challenge 2 pink lady apples!

Im getting really sick of fresh food waste. I have 3 teenage girls who aren’t necessarily fussy eaters however if they can’t open the fridge and there isn’t something ready made to grab they will declare there is nothing in the house and they also seem to think anything that is older than 2 days is inedible, especially fruit and veg.

Ive just opened the fridge for some milk and realised that we once again have stuff that if doesn’t get used in the next couple of days is going to end up in the bin so I’m on a mission to “recycle” the stuff that is in there and present it to my DD’s in a different way…

kinda like a teenage version of the hidden veg sauce I used to make when they are little to force some goodness into them!

Todays challenge 2 pink lady apples. (Nothing wrong with them just loose in the fridge so must be poisonous) and half a tub of plain Greek yogurt.

What can I make wise Mum-netters and does anyone else want to join in for inspiration?

Not sure why you’d keep apples in the fridge.
I’d turn them into apple sauce (for the roast pork we hardly ever have but it’d be a good excuse) or add a couple more and turn them into an Eve’s Pudding - so easy and delish.

Puree apples, add honey and yoghurt, chill, serve.

Surely the best solution is to insist they eat what is available, and challenge their ridiculous idea about food going off? They should be grateful to have any food, many don’t.

I would peel the apples and stew them with some cinnamon and a dash of water.

Then add the stewed apple and cinnamon into the Greek yoghurt, swirl it together to sweeten it up and voila!

I do the same, only plus some golden caster sugar. It’s very popular in our house with porridge or plain yogurt or ice cream.
there is a lot of fun in eating it , believe me

desiccated coconut is lovely in banana bread (kills two birds with one stone if you have extra bananas) I drop the flour by however much coconut I have. Particularly delicious with raspberries or other berries added.

Alternative is lemon drizzle coconut cake - along the same lines - reduce the four and up the coconut.

Macaroons are my favourite though - I think most recipes are just with egg whites and sugar but you can also make them with condensed milk. YUM.
