A thread of ideas for the fridge food that would usually end up in the bin, todays challenge 2 pink lady apples!

Im getting really sick of fresh food waste. I have 3 teenage girls who aren’t necessarily fussy eaters however if they can’t open the fridge and there isn’t something ready made to grab they will declare there is nothing in the house and they also seem to think anything that is older than 2 days is inedible, especially fruit and veg.

Ive just opened the fridge for some milk and realised that we once again have stuff that if doesn’t get used in the next couple of days is going to end up in the bin so I’m on a mission to “recycle” the stuff that is in there and present it to my DD’s in a different way…

kinda like a teenage version of the hidden veg sauce I used to make when they are little to force some goodness into them!

Todays challenge 2 pink lady apples. (Nothing wrong with them just loose in the fridge so must be poisonous) and half a tub of plain Greek yogurt.

What can I make wise Mum-netters and does anyone else want to join in for inspiration?

I would peel the apples and stew them with some cinnamon and a dash of water.

Then add the stewed apple and cinnamon into the Greek yoghurt, swirl it together to sweeten it up and voila!

Stew the apple , top with yoghurt and then sprinkle on brown sugar - brûlée the top

Thanks everyone some great ideas, definitely going to try the the Caramel Apple cake above as looks amazing!

In the end went for a really simple after school treat off apple and ginger fairy cakes, they have had the taste seal of approval from 2/3 girls so far and save two apples going into the recycling.

For those posters that suggested I could just eat them, of course I could but where’s the fun in that, there was something really satisfying in using the apples in something that DC loved rather than they likely would have turned their nose up to.

Yep agree. Just eat the apples and yoghurt up. You don’t need to combine them into a single recipe.

Look up French yogurt cake. Make the recipe,, spread half the batter in a cake pan, add finely chopped apples as a middle layer, sprinkled with cinnamon sugar, add the rest of the batter. Bake.

Following for ideas as always trying to reduce food waste here!

We always seem to be throwing out eggs and spinach. I'm making pancakes more often to use up the eggs and I've recently found out you can freeze fresh spinach so I've been freezing it once it's on the turn then putting a handful in most curries etc.

My first thought was caramel apples with a dollop of yogurt.I would swap you that for the three black bananas in my fruit bowl - and before anyone says it, I'm sick to the back teeth of banana loaf. Also wonder about the economic sense in rescuing three bananas v turning the oven on for an hour.

@Millybob do you have a slow cooker? I always do banana bread in the slow cooker it takes around 2.5 hours

Are you supposed to keep apples in the fridge?

I think they keep better, but in any case a cold Pink Lady is delicious. I keep forgetting this and only eating them when out walking as part of packed lunch, then sometimes the rest of the pack lurks till they're past their crunchy peak of perfection and need cooking.

@Heyhoherewegoagain i mix all the ingredients in a mixing bowl then line the slow cooker with baking paper then just tip it in. Clean tea towel under the lid for condensation and just leave it. It doesn't rise as much as the oven but is fine for us!

The recipe I use is
2 bananas
2 eggs
220g flour
100g sugar I always use brown sugar. Or if I have choc chips then half sugar half chocolate.
100g butter
Dash of vanilla if I have it in

@Decafflatteplease put a square of paper kitchen towel in the spinach bag, it will keep it fresh a lot longer.
Eggs are fine weeks after the use by date. If they are off you can tell immediately once cracked.

Too many apples - cut them into wedges and freeze. You can then use the wedges in smoothies as and when needed.

Or make apple sauce (very easy, no need to peel) and freeze in portions. Apple sauce is divine with greek yogurt.

Apple idea....pork and apple burgers. We don't eat beef so use pork mince alot as a substitute, or turkey mince.

Hello everyone, today’s “using and not wasting what is in the house ingredient” is dedicated coconut, about half a big. what can I do with it?

I am quite enjoying making the DC an after school snack so any ideas that tie in with that would be great!

Everything in my fridge too far gone to be eaten ends up in my compost bin - not the rubbish bin. Give it back to the land.

Do a ready steady cook challange

Place the apples and Yogurt on the kitchen table and photograph
Send picture to the 3 phones

First one who comes up with a 5 & 10 & 20 min recipe gets to pick of something they argue about all the time for a week.

First one to cook something edible gets an actual treat
