What's on the menu at yours tonight?

Easy meal for us tonight, garlic and herb butter chicken thighs served on a bed of rice peas and sweetcorn.

Chicken thighs were done in the slow cooker, frozen peas in the microwave, added a tin of sweetcorn and some rice I had previously cooked and frozen.

Beef and tomato egg noodles with carrot, spring onion, sweetcorn and kale.

And just a quick tomato soup for me as the veggie. 😊

Tomorrow will be salmon, baked tortilla triangles with a tiny bit of Parmesan on top and asparagus for the omnivores and a veggie version of Caesar salad for me.

@caringcarer you’ve just reminded me DS asked for toad in hole the other day! Perfect - that’s Saturday’s dinner sorted!

I made a really good fish stew, then I had 3 glasses of wine, as it was one of those days, and now I’m in bed as I’m a lightweight

1 x baby tapas concoction from the fridge (she ate at nursery)

All Tesco ready meals courtesy of DD18! DH tested positive for covid about an hour ago, I have a cold (testing negative... for now!), DD12 is moody, DD2 is teething and frankly, I cannot be buggered with anything 😫 god bless the big teenager!

What a lovely teen you have. 5 stars for her.

Aw thank you for your kind words! That’s much appreciated. As I’m sure you know, it’s hard when your child has additional needs but you get used to it! Batch cooking and freezing stuff makes my life much more easier:) I also thank God for my air fryer as I’d be dead without it haha

@PinkMoscatoLover 😂 I feel you on that one! I work FT and DH works offshore for weeks at a time so batch cooking and air fryers are how we survive in this house too 😂
