Easy meal for us tonight, garlic and herb butter chicken thighs served on a bed of rice peas and sweetcorn.

Chicken thighs were done in the slow cooker, frozen peas in the microwave, added a tin of sweetcorn and some rice I had previously cooked and frozen.

Just DS (3) and I hear this week as DH away at work. We had chilli made with Turkey mince on a baked potato with a side of asparagus at DSs request 😂

Unfortunately not.

DS has a rare genetic disorder and one of the issues that comes along with it is low weight gain. He struggles to maintain weight so all of his meals needs protein along with a few other things. Everything has to be blended into a purée and he wouldn’t like the sauce of the carbonara!

DD has Autism and getting her to eat is a chose in itself! She only eats her ‘safe foods’ and that’s literally like 3 things. She wouldn’t even entertain the meal I’m about to eat. I’ve given her sausage with garlic bread and that’ll take her about 1 hour to eat bless her. She has a lot of sensory issues when it comes to foods too.

Dinner time is extremely long in my house as both kids always have different meals😬

Black bean stuff (it’s done with garlic and onion and spices), spicy slaw and roasted baby potatoes. Bit random but bloody tasty.

@PinkMoscatoLover yeah I thought there may be some other factors at play when I seen the specific meals for each person 😊 That sounds like a lot of work at meal times! You’re doing an amazing job. I find it challenging enough with one, nevermind 2 with specific needs 😊

Lamb chops marinated in korma paste, garlic cumin olive oil and lemon juice. Served with roasted sweet potatoes, chickpeas and onion. Very lovely. Potatos need at least double time time the recipe says to get crispy though.
