Easy meal for us tonight, garlic and herb butter chicken thighs served on a bed of rice peas and sweetcorn.

Chicken thighs were done in the slow cooker, frozen peas in the microwave, added a tin of sweetcorn and some rice I had previously cooked and frozen.

Curry for us, from a jar as DD has swimming and we don't get in til 7ish and I can't be bothered. Thursdays are easy tea nights for us but my oh isn't keen on takeaways so we inevitably up cooking in some form. Kids eat before swimming so one had fish fingers, smileys and beans and the other had cottage pie made with added lentils. One is picky, one is not. Spot the difference 🙄

DD14 had a chicken, cheese bbq sauce wrap, with a side of chips and salad. DS17 only wanted sandwiches and a sausage roll. DH had Baha fish tacos, a simply cook recipe. I'm having a slim fast shake as I'm due to have bariatric surgery on Monday😕

Chicken, chestnuts, mushrooms and leeks cooked in a sauce made with stock and a splash of port. Very autumnal. Had it with cauliflower rice for healthiness and then followed it with carrot cake with cream cheese frosting. Balance, right? 😊

Me DD and dh had chicken korma.
The boys had KFC chicken poppers and chips.
Youngest had mash with korma and broccoli.

Homemade chilli and Eton Mess. We don't normally have dessert but it's a treat as we have my dad over for tea.

@PinkMoscatoLover yeah I thought there may be some other factors at play when I seen the specific meals for each person 😊 That sounds like a lot of work at meal times! You’re doing an amazing job. I find it challenging enough with one, nevermind 2 with specific needs 😊

Aw thank you for your kind words! That’s much appreciated. As I’m sure you know, it’s hard when your child has additional needs but you get used to it! Batch cooking and freezing stuff makes my life much more easier:) I also thank God for my air fryer as I’d be dead without it haha

Roasted red cabbage, with half a block of Wensleydale with cranberries. Half crumbled over it whilst roasting and then the other half crumbled over just before eating. Oh and doused in a shit ton of butter as well. Nice but the cabbage could've done with been slightly more cooked. Tortilla chips with hummus and dark milk chocolate buttons for later

1 x carbonara
1 x baby tapas concoction from the fridge (she ate at nursery)

All Tesco ready meals courtesy of DD18! DH tested positive for covid about an hour ago, I have a cold (testing negative... for now!), DD12 is moody, DD2 is teething and frankly, I cannot be buggered with anything 😫 god bless the big teenager!

It was meant to be sausage, mash, swede, carrot, peas and gravy but then halfway through cooking the sausages I realised I had no potatoes so it was all of the above with pasta for carbs 🤣

Cor there are some lovely sounding dinners here.

I had chicken korma from Leon at the station (quite nice) but then stupidly bought a packet of crisps & bar of chocolate while waiting for the train. I threw half the crisps away so quite pleased about that.

Chicken curry followed by ice cream.
I only had about a teaspoon of curry powder so I improvised with whatever I could find.

This week has been full on and today was the day I was dreading....husband away for work and I had work in the morning, then Harvest Festival for DD7, quick turnaround to grab DD3 from after school club before taking DD7 to gymnastics the other side of town with only 15 mins to get her there and changed!

So we got McDonald's takeaway. Kids choice. But they are fed and now in bed whilst I have a glass of wine so I consider it a win!

(They both have very decent hot school dinners for lunch so I don't feel too guilty!)

Delia's corned beef hash, slightly altered, with a fried egg on top and lots of HP sauce. It was bloody gorgeous.
