Currently sat down to do my meal plan before I go shopping but lost for ideas. We have the same staple meals often (pasta and meatballs, curry, burgers, spag bol etc), but looking for some new ideas.

Preferably meals that are easy to make as I work from the office 3 days a week and don't get home until about 5:30 ish so not loads of time to prepare and cook. There is 2 of us, and we'd also like to be able to take leftovers for work the next day if possible.

Thanks!

I haven't got a specific meal plan but these are the types of things we have :

Pasta one night - with sausage meatballs, or tuna, or halloumi or Louisiana/Cajun style
Chilli with rice or jacket potatoes (either beef or mixed bean/veg). I also sometimes layer it with tortilla wraps so it's a bit like a lasagne
Chorizo rice (rice with loads of veg, chorizo and a bit of chicken)
Fajitas (usually chicken but sometimes halloumi)
Biryani with veggie curry sauce
Tandoori chicken or salmon with a veggie curry sauce and naan/chapati
Cajun chicken or salmon with a Cajun sauce and rice (works with chips too)
Chicken stuffed with garlic and herb cream cheese, wrapped in bacon and with potatoes/veg
Chicken parmigiana
Paella

Moving winter-wards I'll be adding in cottage pie and stews/casseroles, probably made at the weekend. Things like:
Beef and onions
Chicken cacciatore
Coq au vin
Brisket cooked in beer

Similar get home around 5/5.30 and also like leftovers. Each week I broadly do
1 pasta night (bolognese/carbonara/roasted veg etc)
1 taco/fajita night (fish tacos/refried beans/bean and pepper fajitas etc)
1 stew night
1 soup and baguette night
1 noodle night (either stir fry or ramen)
1 homemade pizza night
1 roast

I do batch cook though so I never cook 7 nights a week.
