Food of the gods.
Had it for the first time in ages, gorgeous cheesy heaven.
Just posting here for macaroni cheese chat.
In my opinion, can't beat it made the traditional way, - saute chopped onion in butter, make into a roux then into a white sauce, add some mustard, salt and pepper and a shed load of extra mature cheddar. Block out all thoughts regarding calories, fat content or carb content.
Key principles of luscious macaroni cheese -

  • use proper elbow macaroni
  • cook it al dente
  • use less pasta than you think you need
  • make a traditional cheese sauce as above. Add more cheese than is decent. Make more sauce than you think you will need and make it runnier than you think it should be
  • combine all and add yet more cheese on top. And sliced tomatoes if you like. Bake. Eat and sink into a lovely cheese and carb coma. Bliss.

Does anyone else make a sort of carbonara-ish thing? Eggs into hot pasta, cook gently until thick. Lots of cheese. Done.

Does anyone else also make a macaroni/cauliflower cheese combo? Extra cheese and breadcrumbs on top, whack under the grill. Cauliflower cooked very much al dente, as always.
A favourite in this house.

No but I add bacon to the top of a cauliflower cheese and make until crispy, very nice.

I need to make this now. Well not now obvs because of the time but soon.

I'm not one for fucking around with it but 2 boiled eggs, halved and at the bottom of the dish are needed. And serve with oven chips for dipping and ketchup 🤤. Carb heaven.

Also - If you're not making it with a whole block of cheese you're doing it wrong.

Has anyone seen (I got it in Iceland; not sure if it's exclusive to them) in the frozen section there's a Cathedral city macaroni cheese? It's got bacon it in and it was delicious.

No onion, no mustard, no bacon. Just a classic sauce (flour, milk and Cheddar cheese) and lots of it.

Regarding onions, I let the milk simmer with an onion in before making the white sauce. Never put onions in the dish itself.

I put a quartered onion in a jug with milk in the microwave. I'm happy to let this infuse for a while.

If I'm organised and baking the dish, I might sprinkle some dried onions on top of the dish.

Always add dried mustard to the roux.

We don't have an Iceland but our Farmfoods does a Goodfellas macaroni with pepperoni through it and it's not bad for a ready meal!

Coming back to report that macaroni cheese made with garlic, Coleman’s powder, odds and sods of cheese in particular any cheese containing chili flakes or pieces of chilk is THE BOMB.

Always add smoked bacon and hard boiled egg. Nice with smoked fish through too.

Onion = good

Bacon on the side = good

Bacon in it = no

Breadcrumbs = very, very good

Sliced tomatoes = acceptable

The absolute must is that you don't put it in the oven. It's a hundred times better under the grill.

I always make double what we will eat on one day.

I put a teaspoonful of Very Lazy Garlic in for starters in the melted butter, before making the sauce in the usual way, including the mustard, don't care which type. I have been known to put scrunged up spinach in, too. Occasionally, capers, not both together.
I like onion but it doesn't like me much, so I don't put that in.
I like thinly sliced tomatoes on top, to go all gooey, as well as a fuckton of extra cheese to brown.

The following day, a tin or two of anchovies over the top of the microwaved remains. Yum.
