What's your favourite slow cooker meal?

I'm going back to work, after 6 months off, at the end of October. I'm expecting to be quite tired at first so want to pre-prep some meals I can then dump in the slow cooker on a morning, before I head out, while I'm still mooching about the house at a steady pace.

What's your best/favourite slow cooker meal that we can try? I always tend to do the same few things in mine & would like to use it more to make things easier for myself 🙂

We had chicken chasseur last night. Recipe from BBC Good Food I think. It was lovely with mashed potatoes and green beans on the side.
We also like chilli done in the slow cooker

Diced beef, half a cup of boiling water with Knorr beef stock gel pot, dried parsley and a huge squirt and tomato puree and black pepper and a tiny squirt of garlic puree from a tube. Frozen dumplings on top. Serve with peas .

I bought this book at the start of my mat leave as I wanted meals that were easy to sort with a newborn and four year old under my feet. 8 months on we still eat something from it at least once a week and can honestly say I've never had a bad meal from it.

I've been doing pulled pork with herbs and smoked paprika. It's delicious. We have it in rolls with a pile of coleslaw on the side. It also goes very well with this.

I buy a smoked ham hock/knuckle and remove the skin. 2 packs of quick soak split peas (soaked as per packet instructions) and throw in any veg I have- onion, carrots, potatoes, swede, celery etc. It makes a lovely, thick pea/ham soup.

I second this! It’s a brilliant book and all the recipes are so simple.

I cut down on the prep by frying the onion mixture and the chicken at the same time.

I mess around by adding in a blended red pepper and some blended cauliflower too. I also add a cup of red lentils and two tins of chickpeas to make the whole thing go a lot further.
