What’s going on with cheese these days?

1st world problem I know! 😋 But for a year or so I can’t get regular (full fat) cheddar to melt. It acts like reduced fat cheese, just staying the same shape and browning to a hard layer. No longer bubbling greasy lovely melty cheese on toast, but a crust of shite.

Doesn’t taste anything like it used to either. Now it’s waxy and tasteless. Wonder if the way they make it has changed.

I don't have this problem! Also the cheddar I buy is generally tasty and not waxy.

Cheese on toast used to be a lovely snack or light tea. I’ve tried to get it all melting and browning on the top but it just goes waxy. That’s with Cathedral City.

I buy Cathedral City and Lidl’s own brand which is made by Dragon Caernarfonshire creamery.

We could try Costal, but that only sells in massive blocks (Costco), so don’t want to commit unless it melts like a boss.

We like mature/extra mature cheddar and I am happy to hear that some cheddars still melts

I've noticed it as well with supermarket cheese.

It's almost as if its been infused with sunflower oil or something.

Definitely notice cheese is not what it used to be.
I have tried different brands in supermarket but don't notice any much better. Very disappointing would pay more for it to be good.

I don't live in the uk. But my favorite cheese is still mature cheddar. Not having any melting issues here. How strange?

I've noticed it too OP. Also pre packed Cambozola in m&s is inevitably furry these days. I know it should be mouldy, but not furry, surely.

Probably a combination of horrible additives that Brexit freely allows plus being left at too hot temperatures for too long due to not enough staff in the logistics chain.

Davidstow is the best cheese, not waxy and plasticky like lots of others.

Catherdral city has definitely gone to pot - used to be great but I never buy it now. Also don't buy supermarket own brand.

Buy a decent cheese and you won't have the issue.

proper cheddar cheese takes time (and hence money) to make and mature. If you buy cheap crap from the supermarket expect it to be cheap crap.

I will admit I’ve had similar these days, even some of the nicer cheeses aren’t amazing. Also, I can never seem to find Ricotta for love nor money at the local supermarket (I buy it for a specific recipe).

Me and DP were talking about this yesterday, we've had the same problem! I've been buying mozzarella mixes instead to melt on top of stuff what I'd usually use a cheddar for.
I usually shop at Morrisons and get their own brands.

It could be down to what the cows are fed on. I find if I buy one cheese throughout the year it does vary.

The Aldi West Country cheddar is very good, tasty, melts well. Basically any of theirs in the smaller packs are good.
