Mash two ripe bananas mix in 2 cups of gluten free oats, half a teaspoon of baking powder and one beaten egg. Stir in 25 g chocolate chips, I use a small bar of dark chocolate from the Aldi 5 bars pack and just bash it up.
Pour into a small rectangle baking tray lined with baking paper and spread it out until even. Bake at 160 degrees in a fan oven for 20 mins. I lift it out using the edges of the paper an put on a cooling rack. When cool I put it in the fridge to set the chocolate then slice into 10 small bars.
I store it in the freezer in an ice cream tub, with baking paper layers so they don’t stick together, then take one out of the freezer each day.

egg & veg muffins - no flour. Like this but lots of other recipes out there. Probably not ideal for lunchbox on hot days but ok otherwise.

Nuts are a great snack for outside school, or nuts & raisins mixture.

Popcorn - you can make your own and bag/box it up.

I don’t think nuts would work and stick together really.it’s sort of a flapjack.

I’ve got a healthy banana chocolate cake recipe with no added sugar.

Melt 30g butter
mash 300g ripe banana
add one egg to the banana and whisk with a fork then add the butter a splash of vanilla and a good splash of milk and stir.
Weigh 125g gluten free self raising flour (Asda do their own which is good), 50g cocoa powder and a teaspoon of bicarbonate of soda and stir into the wet ingredients. Take 25g of dark chocolate and bash into bits. Add half to the cake batter and stir.
Pour into a square cake tin lined with baking powder then sprinkle on the remaining chocolate.

Bake in the oven 160 degrees for 20 mins then lift out of the tin by the paper and put on a rack to cool.
This makes 9 pretty big squares of cake. I have stored squares of it in the freezer and it defrosts well.

Pots of jelly, or custard.
Dairy Lea triangles, or dippers, or cheese strings.

Raisins.
Hard boiled eggs.

Have just cooked some sausages from the Tesco Finest range and noticed that they were GF. I thought of this thread, so will add cooked sausages to the list!
