Risotto is my go to. It's great for using up fridge dregs and leftovers too.

Or marmite pasta with cheddar, but that probably doesn’t count as healthy!

Oooh I've never actually made a risotto before!

And mushrooms on toast sounds phenomenal but I'm trying to avoid bread...

They are so easy! Onion, protein and veg in the pan and soften/brown it off then add a handful of rice per person with a splash of white wine vinegar and swiff it round the pan for a minute then add stock and stir until it's cooked.

I love fish pie or egg fried rice with turkey bacon and those frozen vegetable or chicken dumplings! Or vegetables and egg noodles or jacket potato and cheese.

Tuna steak and salad would be my go to but in reality on the rare occasion it’s just me in for dinner I go without, I hate cooking and clearing up to the point I’d just have an early night 😂

Steak fajita is my go to when I am home alone for dinner. Either a single rump steak or cheaper steak strips (like in the stir fry pack). We always have the spices and a pack of wraps in the cupboard.

Stuffed pasta in sauce with extras chucked in is easy…like sweetcorn, tomato, cold meat etc.

stuffed peppers are easy too, I often do microwave rice and some extra veg mixed in like courgette, then add a bit of feta or something

I’ve also done big mushrooms with a blob of Boursin or similar in the centre, baked in the oven.
