I bought some reduced-price cauliflower and broccoli florets this morning so I've made a bake with it by adding pasta and cheese sauce. Might have it with some slices of the gammon joint leftover from yesterday.

Pasta bake £1.25 per serving
plus approx 50p per serving of gammon.

Two fat pieces of cod, wrapped in prosciutto, covered in puttanesca sauce, and topped with Parmesan - to be served with a green salad.

The cod was out of the freezer but was €11.25 when I bought it. The other ingredients are all store cupboard stuff, apart from the salad. DH and I are trying to avoid carbs at the moment (there's only us), which means our dinners are a bit more expensive because we can't bulk them out with rice/pasta/potatoes etc.

Holidaydiscosinglemum · 07/09/2023 18:51

Chicken pesto gnocchi - about £1.50-£2 per person depending on whether kids have seconds!!

Willmafrockfit · 07/09/2023 18:52

https://www.bbcgoodfood.com/recipes/lahori-chanay-ki-daal

I made this a couple of days ago, it made 6 portions if you had it with bread etc. I had to order the chana daal but I had everything else in. Today I had it with posh sourdough and then fresh fruit so definitely not cheap today. Daals are generally very economical.

I love a person who includes a link to a recipe! 😘

That’s tomorrows dinner sorted, thanks!

indecisivewoman81 · 07/09/2023 18:57

We are having chicken drumsticks in peri peri sauce with rice and veg.

The chicken was £3 for a tray
The rice was a big bag for £4 and we've used two cups so far.

The veg was roughly £4 but not used it all

FoodFann · 07/09/2023 18:58

Chicken fajitas

Chicken £1.30pp
Old El Paso kit £1.50pp
Peppers 50p pp
Lettuce 20p pp
Cheese 50p pp

So about £4 pp

DisforDarkChocolate · 07/09/2023 19:01

@YoongiMarryMe I found the chana daal needed longer to cook than it said. When I warmed portions I added a dash of water and cooked for cooked for about 15 minutes and it was delicious. Definitely one I'll make again.

Greensleeves · 07/09/2023 19:06

I made a massive pan of fire chicken fried rice yesterday which has gone down a bomb with everyone, so we had it for dinner yesterday, DS2 had an infeasibly large helping of it for lunch today, and we're having it for dinner again tonight. It was a "winging it" job so I'm chuffed it turned out so well. Am going to add it to my regular list.

Cost: I don't know exactly, but 4 chicken breasts would be the bulk of the expense. Basmati sella rice from a 10kg bag, peppers, onions, peas, homegrown chillies, mirin, garlic, ginger, sesame oil, olive oil, turmeric, garam masala, chilli powder, lime juice, star anise, cardamom, a bit of soy sauce and cumin seeds. Cheaper than most meals but I do have a good spice cupboard.

lalaloopyhead · 07/09/2023 19:11

I just had a jacket spud (23p) with half tub of cottage cheese (39p) and a handful of mixes leaf salad..had butter and salad dressing from the fridge so under £1 total. Just a quick dinner just for me though.

geminiflanagan · 07/09/2023 19:15

Chicken & chickpea curry with broccoli and rice

£6 chicken
45p chickpeas
65p microwave rice
85p coconut milk

Then an onion, various spices etc. So roughly £8 all in, for 4 portions.

Lovepeaceunderstanding · 07/09/2023 19:18

Tofu in black bean sauce (onion and green pepper ) with tender stem broccoli stir fried with garlic, chilli and soy sauce. My husband will have some rice.
Sorry I’ve no idea how much it will cost.

Borka · 07/09/2023 19:18

Spaghetti bolognese, which was surprisingly good despite not being weather-appropriate. About £5 for 3 servings.

Mammma91 · 07/09/2023 19:25

Some of these sound phenomenal. If anyone fancies sharing their recipe I’d be very grateful. I had a portion of chips with Nan and garlic mayo. Was about £5.50 from the local takeaway. I’m still in my first trimester of pregnancy and nothing is tolerable. DS had beans on toast, I think it cost 60p to feed him and he had 2 yogurts 😂

Gingerkittykat · 07/09/2023 19:28

Ham and egg fried rice
Rice=35p
2 eggs= 50p
ham= £1.87
Mixed veg from freezer =approx 20p
Soy sauce, sesame oil, five spice =approx 30p
Chinese curry sauce made from Goldfish paste=approx 20p

£3.42 for 2 people so £1.71 per person.

Georgyporky · 07/09/2023 19:32

I found "yellow-stickered" lambs' hearts in Tesco today.
So a mighty-meaty meal starts @ 80p per person, CBA to work out the cost of veg.

Goldmember · 07/09/2023 19:32

Went to pizza hut for a birthday dinner and 😵 the bill. It cost £70 for the 4 of us, it unsurprisingly empty.

Trickofthetrade · 07/09/2023 19:35

Salmon fillets with pesto and breadcrumbs, baked in oven; steamed new potatoes, mangetout, broccoli and asparagus. Costs about £4-£5 per person.

caringcarer · 07/09/2023 19:35

Busy tonight just got back from DC sports, so frozen fish, frozen chips and mushy peas cooked in air fryer with apple pie and whipped cream afterwards for DC. Roast tomorrow though.

Bumblebee2022 · 07/09/2023 19:37

Sausages (Aldi specially selected 50% off) -£1.75
cous cous - 50p
salad - probably about £1 (some of it was from the garden, we have an abundance of red tomatoes at the moment)
dh and ds had their sausage in a wrap, - 20p
so £3.45 between 3 of us.

thats a really cheap meal! I wish they were all in the same price bracket.

dazzlingdeborahrose · 07/09/2023 19:38

Pizzas in the Ooni pizza oven. About £1.50 per pizza unless o add in the price of the ooni and then each pizza costs about 30 quid 🤣

SquigglePigs · 07/09/2023 19:41

We've had chicken kievs (£4.50 for 2), new potatoes, green beans, peas and sweetcorn (so maybe another £2 all in on the veg). DD had a sausage with hers because she does like kievs (can't remember how much they are but maybe 30-50p each?). So something around £7 for the three of us.

Last night though we had tuna pasta bake that I made from scratch that can't have cost more than about £3 plus £1 of garlic bread and there was leftovers so some nights are better than others!

dudsville · 07/09/2023 19:44

I'm not good with numbers, but it must have been reasonably priced. It was

Roasted butternut squash, courgette, carrot, cauliflower and broccoli tossed in a little olive oil and seasoning.

With roasted mixed seeds and nuts tossed in olive oil and soy sauce

With rice.

boomtickhouse · 07/09/2023 19:46

Ciabatta with halloumi & tomato salad, bruschetta style. Went out for lunch so not that hungry. Probably £5pp.

DinosApple · 07/09/2023 19:48

Leftover lentil Bolognese for me and DH. Probably around £1 per portion.

Eggy bread and baked beans for DC (club night). Probably £1.20 per portion.

Total around a fiver.
