Meal planning

DH has retired and is taking over the childcare as I work full time. Problem is he really cannot cook....

I don't mind meal prepping and leaving things to heat up.

So far for this week I've prepped:

Sausage casserole to go in the oven
Mexican chicken stew which just needs the slow cooker turning on
Miso glazed salmon to go under the grill
Slow cooked beef ribs in sweet & sour sauce which I will de-fat once cooked and then they just need heating through.
Towards the end of the week I'll do roast chicken portions and roast potatoes.

There will be some sort of veg with each meal.

Problem is each of the first four dishes are served with rice. It's not a disaster as my kids love rice but I'd like them to have some variety. They are non-dairy to mash isn't a great option.

What else can he serve with the above?

Also, please hit me with your easiest non-dairy, non-pork meals please.

I wouldn't have rice with the sausage casserole or Mexican stew personally. I'd either do pasta (like buttered noodles or something but without the butter) with the casserole or potatoes and veggies. The Mexican stew I'd probably end up turning into tacos or a Mexican lasagne type thing.

Sweet potato wedges would also go nicely with the salmon.

You can make mash with oat milk, jacket potatoes, sweet potato, chapattis or naan bread

I mash with with a bit of olive oil because of non dairy DH.

Cous cous or bread with the sausage casserole, jacket sweet potatoes or sweet potato wedges with the Mexican stew and rice or noodles with the salmon.
