I don't like Aubergines... find me a recipe that will convince me!

Veggie here, and eat most fruit and veg, but I cannot bring myself to eat aubergines. Every meal I've had with them in.. those spongy weird little lumps ..nope.
I'd like to like them if that makes sense. .. are there any (vegetarian) recipes that I could try that would help?!

Cook them in a tomato sauce and they go all rich and gooey.

I like moussaka and used to make it.

I've also had an Italian dish a couple of times which incorporated aubergines and it was simply lovely - I wish I could remember the name, I had it as a takeaway and in a restaurant.

The important thing is with aubergines is that you don't let them be soggy.

I love melanzane parmigiana. I don't know if parmesan is veggie or not, but there should be substitutes if needed.

Thirding the smoked aubergine chili! It's my favourite chili recipe now. The aubergines kind of melt into it as well so perfect if you're not a big aubergine fan.

Treat them like tofu, blot the liquid out, sprinkle with cornflour and a powdered seasoning then fry. Really tasty that way

They need to be cooked properly in order to make them soft and velvety rather than spongy

all these recipes do that, cooked properly they are lovely. Undercooked digusting

Fourthing (I think!) the burnt aubergine chilli.

Also the aubgerine and red pepper lasagne recipe on the Tesco website, but with added cheese and herbs!

I do a veggie chilli with grated aubergine in it. So good!
