Got a good harvest of plum tomatoes from the allotment today and really need to find something to do with them over the next few days (family of 3), so I need some inspiration.

I made a tomato and mascarpone risotto the other day from bbc good food, their recipe uses canned cherry toms but I used fresh plus a bit of tomato pure. Worked well, a fresh tasting risotto suitable for summer. Would also work with any kind of cream cheese I think.

Cut in half, put in a low oven for a day or 2 to dry out then put in large jar covered with olive oil. Sun dried tomatoes to get you through winter!

Tomato soup sounds lovely, I'll make some crusty bread tomorrow to go with it.

Never tried the tomato risotto but sounds good.

warm tomato salad.

  • cook rice as per instruction
  • once cooked mix in sour creme or creme fraiche & chopped tomatos
  • herbs to taste (we love basil & fresh oregano)
  • season to taste

Panzanella. You don’t lose the freshness of the tomatoes and it’s a great side to serve with pretty much anything.

If you have some greener tomatoes, try an authentic southern fried green tomatoes recipe, with homemade ranch.

Just a lovely caprese salad would be my suggestion. It's so delicious and would showcase your lovely homegrown toms. You could add a griddled chicken breast or pan sauteed white fish on the side for protein.

I have a glut too. I roast them with garlic, blitz and freeze in bags to use in tomato sauces over the next few months (the ones that actually make it from the greenhouse into the kitchen before I eat them).

Can also cook down with some celery and blitz for fresh tomato juice (for virgin or real Bloody Marys.

I normally batch cook some pasta sauce made with onion, garlic, olive oil and basil. Chop the tomatoes but leave them s bit chunky.

We’ve done the oven dried tomatoes several times - earlier this week DH had the oven set to 50, but if I’d done it I’d have probably gone for 70 and left them in less time! The key is making sure they are completely covered by the oil so they can’t get mould on them.

Thank you all so much, I'll definitely try some of these recipes. The sun dried tomatoes sounds like a great idea when you have loads, we do still have another few kg to harvest in the next week or so.

Also making tomato sauce and freezing sounds great.

I suspect we'd be a bit sick of tomatoes by the end of summer 😀. We just didn't expect so many.

I make a delicious soup. Roast tomatoes, red peppers, garlic, onion (all quartered/halved) on a tray with oil, oregano, black pepper, salt...even a sprinkle of bouillon stock powder. And my secret ingredient - a pinch of dried tarragon. Roast for about 20 minutes until a tiny bit caught and then blend with a splash of water. Best soup recipe ever and takes about 5 minutes to prepare.
