Can you help me think up a meal?

Hi everyone,

I've been emailing back and forth with various places somewhere we are going on holiday and nowhere seems able to cater for me. I am gluten intolerant. It isn't a disclaimer that the kitchen uses gluten (as does my own), it's out and out we use the same fryer/don't have the space to use different utensils. OK fine. So... I feel really bad as my husband misses out, obviously I do too but when you're gf you get used to it!

Instead I want to cook us a special dinner whilst we are there. Does anyone have any suggestions for a nice dinner/dessert that I can realistically make without bringing half of my kitchen? Though I will have basic condiments/spices etc. With me. I'm stumped and a bit sad! We will be cooking all week anyway, but want something a bit fancier! Thank you.

What facilities does the kitchen in your accommodation have?

I’d either make:
risotto with roasted butternut squash, asparagus and goats cheese
or
cod with crispy bacon, sautéed potatoes and broad bean & pea mash

I'm assuming SC so possibly a hob and microwave?

And do you have any other dietary requirements (vegetarian etc)

I was thinking steak with mashed potatoes (but nice ones that you make with some garlic and butter/cream) with some green beans or rocket salad and for pudding I'd probably look to buy something local (fruit, pana cotta, cheeseboard with gf crackers)

Steak with potato dauphinoise (assemble it before you go so it just needs to go in the oven?), asparagus and pepper/bordelaise sauce

Sorry yes that would have been helpful! It's a full kitchen including freezer so shouldn't have any issues with facilities. No other dietary requirements. These all sound lush so far. How had I not considered a cheese board!!

Our favourite meal at the moment is Nadiyas peanut chicken gnocchi. I switch out the chicken thighs for breast and you could have another carb instead of gnocchi. Obviously no good for nut allergy or diabetes as there's a fair amount of honey but it's delicious.

Nigella's chicken and pea traybake. Honestly, I always do it when we're self-catering; it's so straightforward and yet it feels like a real treat, somehow.

If you've an oven then definitely chips with the steak!
