Mince smell

Making a lasagne, mince from freezer (frozen before use by date). Defrosted overnight in the fridge.

Smelled ok when taken form fridge but now it's cooking it smells almost vinegary. Is it ok to use?!

It's cooking with carrots, celery, onion and garlic. So nothing else to give that scent

Id use it - but i always use things well past their sell by dates, so might not be the best person to comment!

I think I may continue but just taste before assembling the lasagne....
