Tricky truckles

I recently bought a fancy cheese truckle from a local market. Pizza flavoured and delicious. The whole thing comes encased in red wax.

Are you meant to remove all the wax when you get it home and how to store it?

I haven't removed the wax as I thought it helps prevent the cheese drying it. But when I cut a slice off I'm getting bits of wax stuck to the cheese as I cut down 🙁

I store in the wax for freshness! When I'm going to cut a wedge off, I put the flat part of the cheese knife under the edge of the wax and peel the wax back from the portion I want to cut, then cut it - no wax on the cheese then! So only pulling of the wax from the section you're taking at that time, a bit like peeling a potato.

If it's a small scale cheese, made at home or similar, the wax may well be softer than you're used to and is often painted on, not dipped, as its cheaper. This sometimes means it can be thinner than your 'normal' wax coatings, so heats up quicker and can then be smeary...
Keep in fridge is all I can suggest.

I do keep it in the fridge so I'm doing that bit!
