slow cooker meals for one, ideas please

My life revolves around my mini slow cookers. In one, I cold soak oats overnight in water with almond butter and maple syrup, then switch it on in the morning to warm it up, adding frozen fruit shortly before eating. In the other, I soak beans or chickpeas overnight, rinse them in the morning and add frozen sweet potato or butternut squash, oil, curry or chilli spices, and maybe a handful of brown rice. For the last hour or so of cooking, I like to cram in as much frozen veg as possible - spinach, broccoli, cauliflower, carrots, green beans, you get the idea. It's always a ginger/garlic/coconut curry or a vegetable chilli.

What else can I make using the same sort of ingredients and process? I WFH so I can add ingredients throughout the day if they won't survive long hours of cooking. I feel great on this regime but a little more variety in flavour would be welcome.

A little bump.

I had an idea to slow cook canned tomatoes overnight with onions, green peppers, smoked paprika, cumin and whatnot, then crack a couple of eggs into it in the morning for a kind of menemen. I love slow-cooked tomatoes.
