Pregnant and shattered.

I will be doing some big cook ups to freeze in prep for baby but I want to know what are your quick and easy dinner ideas when you have limited time that I can add to my list around the freezer food.

Obviously thinking of ...

  • jacket potatoes
  • beans on toast
  • cheese on toast
  • sausage egg and chips
  • marinated chicken and micro flavoured rice

Eggs are a godsend - filling and nutritious. I had a lot of omelettes in the crazy early weeks.

Bag of salad, hummus, falafel, toasted pitas, tomatoes and cucumber.

Creamy salmon pasta with greens:
Cook pasta, add frozen peas for the last 5 minutes, drain (reserving a bit of the water) then stir through fresh spinach until it wilts. Add a blob of cream cheese and flake in fillet of hot-smoked salmon, or a cooked salmon fillet. Season. Let down with a bit of pasta water as needed

Batch cook and freeze in portions - curries, spag bol, lasagne, cottage pie, soups

Buy a soup maker for fresh soups

Fresh - stir-fries, scrambled eggs with tomatoes & mushrooms, omelettes with salad, salad and cold meats/salmon fillet, pasta - hot or cold with vege and chicken, homemade pizza (just buy the base for ease).

If you're putting away marinated chicken then remember it's quicker to cook on the stove than in oven.
I fillet the chicken breast then marinade in tandoori paste. Once it's defrosted it takes minutes to cook in a frying pan lightly oiled. Then you can serve in wraps, on rice or with chips.
Make sure you have wraps, pitta bread and chips in the freezer always.
I do similar with filleted fish and cook in actifry then make fish burgers with lots of salad or again serve with chips or boiled rice.
Very much depends on the kind of meals you are used to having. Make and freeze pizza sauce in ice cube trays which you can then use for either pizza, pasta, or even just grilled pizza toasties.

Put pasta on to cook
Halve fresh cherry tomatoes, put in a pan with olive oil and chopped garlic
When pasta is ready, add label of pasta water to tomatoes, drain pasta, add to tomatoes. Grate on cheese. Salt and pepper to taste

Optional adds: prawns, spinach, peas (defrosted), basil

Or ready made filled pasta.
