Tell me your favourite slow cooker recipe

....and why you like it? I feel like it's slow cooker food weather so post your absolute favourite recipe (only one) and tell me why it's good.

This is mine. It's good because it's super cheap, tasty and versatile. You can make it into fajitas, burritos, enchiladas or put it in a pasta bake.

I did a half shoulder of lamb, with puy lentils, loads of mushrooms, red wine and smoky chillies the other week. It was fantastic and probably non repeatable as I just winged it with the available ingredients.

Pulled pork - pork shoulder marinated and slow cooked then served with buns, salad and homemade coleslaw.

I like to make a veg surprise soup with whatever I can find in fridge/needs using up. Last time added some chorizo and chilli, potatoes and leeks. Never the same twice! Just add crusty bread.

I've got the slow cooker on - pork and leek stew for tonight as it's so miserable (I've lit the log burner too to raise the temp and lift the damp/mood).

Brown off diced pork in frying pan while kettle boils.
Slice leek thinly in rounds and fry to soften when the pork is ready and has been transferred to slow cooker.
Once leek is softened, add boiling water to the leeks (you want enough liquid to just cover the pork in the pot) and one veg stock cube (I use Knorr stock pots).
Stir about a bit in the frying pan then cover the pork in the slow cooker.
Put on auto and leave for a few hours...

I made a beef stew in mine yesterday! I'm just back from a holiday in Spain and fancied something comforting in the bad weather.
Beef pieces, onions, carrot, diced swede, potatoes, stock, a sprig of thyme, salt and pepper and cornflour to thicken towards the end of cooking. Served with some peas........lovely.
I have a sear and stew slow cooker with a metal pot that can be used on the stove, I use it loads. I like to cook chicken thighs seasoned with kebab/tandoor/herbs etc and use it for wraps, salads, sandwiches etc.
Pulled pork is amazing, honey and mustard chicken casserole is a firm family favourite as is a slow-cooked gammon joint. Chilli, curry, bolognese and cottage pie filling are also staples.
I love my slow cooker!!!

6 thighs
8 tbl sp honey &soy
Garlic, ginger and chilli I just Chuck in
100 ml of chicken stock
Then I just do a of noodles per person and top up with a bit of stock to cook them

@stiltonbriecheddar loads of people say about slow cooker lasagne but logistically how does that work? Do you just break all the lasagne up?

Similar to pp but with hoisin chicken: chicken thighs, garlic, soy sauce, honey, hoisin sauce. Chuck in slow cooker and shred before serving.
Best ever sausage casserole from delish (I think!)
