Lunch ideas

What do you have for lunch that's quick and easy to prepare - also bloody tasty and nutritious 😊
I'm on the hunt for new ideas ... fed up of making sandwiches 😊

Eggs often with avocado/tomatoes and toast

Apple and peanut butter, cheese and grapes

I have:

  • rye/sourdough toast with mashed avocado, crumbled feta, spring onions and chopped tomato on the top, with balsamic vinegar.
  • Crackers with brie or other cheese, with some grapes on the side
  • a sort of greek meze with stuffed vine leaves (shop bought), hummus, Olives, tzatziki and pitta bread

Prawns and avocado on crackers. Or mixed with mayo/yoghurt in a pitta

Beetroot with goats cheese and walnuts, some leaves if I have them

Scrambled/boiled eggs with toast and veg

Pate or cheese on toast with fruit/veg

Chickpea and feta salad with lots of veg - lots of chopping but can make a big batch at once, lasts several days

Noodle soup - stock flavoured with ginger/garlic paste, soy sauce, sesame oil, add noodles and some greens

In the winter I’ll do a pot of lentils or pearl barley cooked with stock, bacon and veg, will do a few lunches

Spaghettini aglio olio. Good with some jarred roast peppers or artichokes warmed and stirred in

Leftovers! Any time I’m cooking a family meal I’ll make a bit extra if it’s suitable, and have that for lunch, usually 2 days later so I’m not so bored of it

I have a salad for lunch each day usually tuna, egg, chickpeas or chicken, occasionally ham/gammon or prawns . Chicken is done with various different spices or flavourings, paprika, lemon and herbs, tandoori, garlic and black pepper, honey and mustard etc.
I always have a leaf or lettuce base but the other salad veg varies each day, I often include either fruit or pickled veg, or fresh herbs, sometimes roasted veg. I dress with fruit flavoured or balsamic vinegar, lemon/lime juice or yoghurt based dressings. If I want extra crunch I like toasted seeds or chickpeas.

If salad isn't your thing
Cheese and crackers with nice fruit and chutneys.
Toasted pita, hummus and crudités.
Eggs, beans, avocado, tomatoes, mushrooms, cheese on toast.
Bagels with cream cheese and smoked salmon
Soup
Fritata or omelettes
Tuna pasta
Toasted sandwiches
Quaesidilla
