I somehow haven't cracked this skill yet (pathetic, I know).

I either end up having to throw food away because it's gone off, or we end up with nothing left in to eat.

It's just DS4 and I that live here (he is away for two nights per week) so it's hard to shop for 1.5 people.

We are snackers.

You need things that are variable and flexible and can turn into meals for one or two people.

Wraps are amazing. Easy to portion, can fill them with Chili and bake in oven with tomato sauce for enchiladas. Can do southern fried crispy chicken in a wrap. Cut up left overs and bake for tortilla chips.

If you make the Chili it can be eaten with rice as well, easy to freeze too.

freezer veg might work well to supplement as and when?

Do you have a freezer? You can freeze most leftovers. We meal plan but we're not snackers.
We keep basic ingredients in - eggs, chicken, beef mince.
We build a meal around those with other ingredients -
veg; tinned tomatoes and spices, green veg, salad plus
carbs; bread or wraps, dumplings.
Then something for pudding, usually fruit, yoghurt, custard in different combos. We like flavoured custard - chocolate, or banana.

If we snack we try to keep it healthy, like cheese and veg savoury muffins or pancakes, or flavoured bread.
