Reheating food

I put some mince (fresh/not cooked) on the weekend as Tesco delivered it with a shorter date than I'd like.

I defrosted overnight in the fridge and planned to make mince and dumpling this afternoon but no longer will have time

Will it be ok to cook the mince in the gravy much later tonight and store in the fridge overnight and reheat in the slow cooker tomorrow for dinner?

Yes it will be fine. I would just brown off the mince and then put in the fridge.
Or just put it in the slow cooker when you go to bed. Mince tastes so much better the longer and lower it is cooked.
