Vegetarian Lasagna (or Moussaka) - No Tomatoes

As the title says! Can anyone link me to a recipe that they have tried, and is decent, for a veggie lasagna or moussaka that doesn't have tomatoes as an ingredient?

What about Cannelloni instead with a ricotta filling.

I make one with courgettes and mushrooms using pesto as the sauce.

You want to look up Lasagna Primavera. I have an excellent recipe from Gousto but unfortunately I can't link it.

In a bowl mix spinach, cottage cheese, quark and mascarpone (or Ricotta).
I do one layer quorn mince/lasagne sheets/above white mixture. Top with sliced mozzarella. Bake for 40 mins. Takes me 15 mins to prep and is delicious!

You can mix pesto in with the quorn mince too but entirely optional!

If you are using pesto check it is vegetarian as it usually isn't if it contains proper Parmesan
