What would you make with these ingredients?

I have

Aubergines
Chard
Spring greens
Cauliflower
Carrots
Lots of salady bits
Pancetta
Eggs
Lots of store cupboard stuff (pasta, rice, spices etc)

I'd like to make something for dinner that uses some of this lot up- probably won't be able to use it all and that's fine. I am going to the shops later for cat food so could buy anything else I need but am really hoping to get some of what I have eaten so don't want to buy a lot. I'm a confident cook and we eat everything. WWYD?

Oh I really like that idea- thank you! Honestly, I like cooking but can't stand the endless decision-making.

Stirfry the aubergine, carrots, cauli, chard, spring greens with a sticky sauce (vinegar, soy sauce, honey, chilli type mix), serve over rice. Could probably top with an egg if you like.

Curry with the first four ingredients, carbonara with the pancetta and eggs with salad on the side.

Grab a pot of hummus for the carrots as a snack.

I was going to suggest a vegetable curry but this idea is better.

That looks like the ingredients for an Ottolenghi recipe, or two.

Do you have couscous? Roast the aubergines and cauliflower and use in a couscous salad. Add a bit of harissa paste and some feta. This should keep for a few days in the fridge.

Make a Spanish omelette with the eggs and pancetta. I've read that you can use crisps instead of sliced potatoes, but I've never tried. Might be one if you're feel like experimenting? This will also keep a few days in the fridge.

Chickpeas and chard go together quite well. You can make a Moroccan stew and add the carrots too. Again, this will keep so that you don't have to eat it all in one go. And you can freeze it too.

Definitely frittata. I did similar last night and it's a great way of using up bits and pieces from the fridge.

Id do a tray bake with the Aubergines, Cauliflower, Carrots and Pancetta with olive oil and lots of middle eastern spices. Then toss the Chard and Spring greens through it at the end till they are cooked. Serve with a tahini dressing and fried Eggs on top and any chopped fresh herbs you have. You can toss cooked grains through too, if you want to make it more substantial or have bread on the side, and a side salad.
