Coming at this as someone carrying around a sketchbook as an artists working journal, but don't know much about the requirements of journalling. It sounds like it would want a spiral bound or stitched sketchbook? High quality artists sketchbooks often come as gummed pads.

Generally you'd want a paper with a bit of 'tooth' for drawing, smooth for ink, and watercolour paper for watercolours.

(I make my own sketchbooks with mixed papers so I have whatever I need to hand in the same book)

This is high quality 260 gsm paper able to handle all three mediums well:

This is more standard 160gsm paper but will still take light wash watercolours:

This I know nothing about but it says it comes in a full range of paper types and looks like it might be designed for the sort of thing you're after: https://www.jacksonsart.com/strathmore-visual-journals-pads-96130

Jacksons are a professional art supplier. You could give their customer services a call (0)207 254 0077 207 254 0077

Thanks @Elleherd - super helpful. I don't really like bound sketchbooks, but i think that is the way I will be going... I am going to call the number so thanks for sharing that. I spend so much time outdoors I decided it was time to get creative and start documenting what i am seeing! Merging two loves.
