And what do you have with it, if anything?

I'm in a mozzarella phase. Can happily eat it on its own if I'm honest!

To be honest probably a good old extra mature cheddar, the more mature and tangy the better. I also love smoked cheeses, especially smoked cheddar. I like to keep it simple, just cheese on its own with some nice crackers is a beautiful thing.

If I could only have one cheese, it'd probably have to be a strong cheddar (the 'crunchy' sort) as it's the most versatile - sandwiches (with onion marmalade), grated, cooked.

Brie and camembert. I just eat on their own or with a French stick. And I love the camembert and bread wreaths that come out at Christmas.
