Mince Use By Today- need to make lasagne for Monday

As above. Just realised mince in the fridge has a use by of today. I need to make a lasagne either today or tomorrow, for Monday (I won't have time to cook it on Monday). Would you:

  • freeze the mince today, and then defrost it tomorrow to make the lasagne (seems a bit pointless?)
  • make it today, cook it and reheat Monday?

Am rubbish with stuff like this!

If it's beef mince it'll be fine to use tomorrow, make and cook the lasagne and reheat on Monday

I would make the ragu and bechamel today and chill overnight, then assemble the lasagne cold tomorrow ready for baking on Monday.

I would cook the sauce today and put in the fridge. Assemble lasagne on monday.

Def cook today. If you freeze it and defrost it you are just giving yourself more work for no good reason. I think lasagnas taste better after sitting for a bit, I think the flavours come out a bit more

This is what I would do as I think lasagne takes forever so often make a double portion of the sauce and freeze to make a quick lasagne on another date!

Similar to pp. I'd make the Bolognese today and freeze. Either buy a jar of white sauce or make my own tomorrow and assemble Monday. Or make the whole thing today and freeze.

Cook it today. Chill rapidly. It will then keep quite safely in the fridge for three days.

Reheat thoroughly checking the core temperature.
