What to cook in the heat?

I'm entertaining this weekend, what do I cook in this heat? Quite a few with sensory difficulties so thinking about something that's not too fussy. Something like a roast would go down well but I can't bear the oven on for that long!

Could you not put one if those chickens in the foil tin with the bag takes around 1hr 25 in the oven? Then do new potatoes with salad coleslaw and crusty bread so you wouldn't need to be in the kitchen so much? Much of that could be prepped in the morning before it gets to warm.

How about something like cold chicken portions, cooked the night before when it is a bit cooler. Serve with something like cold new potatoes (out of a tin if needs be) cold sweetcorn, beetroot and what ever other salad stuff your guests are happy to eat. Posh ice-cream or sorbet served on merengue nests for afters

chicken keiv, baked potato, salad coleslaw etc
or buy a cooked chicken tray of oven ready baby potatoes & tray of veg
quick easy and tasty.

Cold meats, cheeses, hummus and breadsticks, quiche, stuffed olives, tapenade, olive bread. And a lovely pitcher of sangria.

We are having BBQ for the foreseeable future, steak, chicken thighs, salmon, sausages. EVERYTHING will be on the BBQ as I'm not cooking in the kitchen. And we'll have lots of salad.
