Whether it’s breakfast, lunch or dinner, what’s your favourite thing to eat?

Not necessarily low calorie or anything, just something that makes you feel like you’re getting everything you need.
It also must be delicious!

Traybake of chicken, butternut squash, red onion, red and green peppers and butterbeans (or black beans). Drizzle olive oil over, some salt and pepper, maybe Cajun or Mexican spices, or a tahini dressing.

Minimal washing up, all the protein and fibre.

Greek salad, feta chunks, onions, juicy tomatoes, lettuce and cucumber with lots of balsamic and tzaziki. Refreshing and you hardly notice you're consuming a block of cheese with all the veg!

Breakfast - chia seeds soaked in milk overnight then add raisins, sultanas, etc in the morning. Easy and healthy.

Veg can be asparagus (baked too) or brocoli etc. Chuck it all in together!

Porridge - I have this every day.

In a saucepan add oats, oat milk, flaxseeds, a banana and some 100% peanut butter. Bring to boil and serve, I Chuck some blueberries on top too sometimes

Roasted veg (peppers, butternut, courgette, red onion) cooked with drizzle of balsamic, mixed with cooked lentils ( I do buy the ready cooked in the pouch) and some crumbled feta on top.

Tandoori salmon, potato wedges or new potatoes, roasted cherry tomatoes and green beans.

I also like Jamie oliver’s recipe for grains, baby carrots (I roast rather than fry them), pomegranate, feta (for everyone else, I don’t like a lot of it) and mint.

Veg curry, I'm having it tonight with carrots, potato, turnip and turnip greens, peas, green beans and sweetcorn. And a hot fresh buttered wholemeal scone on the side. Fabulous.

Pan fried halibut/turbot with tonnes of green veggies and a little bit of lemon butter sauce.
Chicken breast, marinated in yogurt, tomato purée and curry powder. Bung on the BBQ or in the oven, serve with more yogurt, fresh chills and salad.
When i’m knackered or can’t be arsed, my go to is a full bag of mixed leaves, low fat mozzarella and 3 chopped up slices of Parma ham. Bit of balsamic and you’re done!

If I'm really tired I do a saucepan of potatoes, white fish and vegetables with Swiss marigold stock and star anise, lemon and EVOO when ready to eat.

Tastes gorgeous.

There’s a book called The Green Roasting Tin that is great for this. There’s a Halloumi & veg tray bake in there that always makes me feel really well nourished!

  • Vietnamese summer rolls. I'm not veggie, but prefer them vegan (they are gluten free also) and served with a very easy satay sauce I shake up in a jar
  • Watermelon, grilled halloumi, green beans- all chopped to a similar size then add toasted pinenuts
  • Skate wings grilled with garlic butter and capers, served with new potatoes and veg
  • Cubed, cooked pumpkin, spinach, red onions or spring onions, toasted pinenuts and balsamic glaze

Chicken Caesar salad with a boiled egg (or pasta salad)

Chilli bowl with a lovely big salad and a small portion of rice or substitute the rice for nachos (chop up a small tortilla wrap into nacho shapes and air fry/grill until crispy)

I love low fat beef or turkey burgers and using romain lettuce as the burger bun with some sweet potato chunks

Stir fry with a home made satay sauce

A home made chicken kebab -
Big chunks of chargrilled marinated chicken, red cabbage sauerkraut, shredded lettuce, tomato, cucumber, pickles red onions, hummus and tsatsiki on a home made wholemeal flatbread.
