I made these once for a summer lunch - served it in tall champagne flutes rather than a larger one and it went down really well.

Cook some fresh pineapple with sugar and a small glass of wine till it's syrupy.
Whilst it's very hot pour it into a baked pastry case and pour a small carton of double cream over.
The cream sets, and it's beautiful.

Ottolenghi yoghurt thyme and honey cheesecake. A bit time consuming due to straining the yoghurt, and it needs time to set, ideally overnight. But delicious and really not difficult.

Pavlova - choose your topping but for summer passion fruit and raspberries is a hit.
make the meringue the day before and just whip up the cream and add with fruit on the day.

My mum used to make a Charlotte Russe with banana mouse, lime jelly and sponge fingers. It could be updated to not be quite so 80s 😄 here is a raspberry one. I can guarantee it will be new to many people.

Can't beat a fresh fruit tart - blind bake (or buy) pastry case, line with creme patisseriere or mascapone whipped with sugar/sweetener of choice and flavour of choice (we used lavender recently, worked really well) arrange fruits of choice on tarte then glaze with a light jelly or sugar syrup - I make a jelly with Prosecco!

I would make a pavlova with loads of fresh fruit and cream on the top , always looks amazing , easy to make in advance , easy to repair ( cover the cracks ) if it goes wrong / breaks
I would also do a no cook cheese cake with fruit again looks great , tastes great, easy to make and can be made in advance
I would do a small cheese board for anyone who didn’t like the other two and lay them all out so they can have a bit of each should they wish ,
alternatively a fresh fruit cocktail would cover almost all allergens

Lots of lovely recipes here, The main is an assortment of Ottolenghi bits and includes Labneh (cream cheese/yoghurt dip) and worry about including anything too creamy in the dessert. Do you think it's ok to include?

Easiest home-made ice cream ever - needs no churning. 1 can of sweetened condensed milk. 16 fl oz (2 cups) heavy cream. Flavouring (simplest is vanilla essence but there are so many variations possible). Put all ingredients in a bowl and beat with a mixer on high speed for about 4 minutes until very soft peaks. Turn into a loaf tin and freeze. I have done many variations of this. Chocolate is add 3 tbsp unsweetened cocoa to the condensed milk. Lemon is add large spoonful of lemon curd and a tsp lemon essence. Rocher is add a large spoonful of Nutella. You can swirl through with all sorts of things - I have done ginger preserve swirled through chocolate. Lemon swirled through with strawberries cooked down with a little sugar until syrupy. Chocolate swirled through with peanut butter mixed with caramel. You can be very inventive.
