Why is uncut sliced bread different to sliced bread. Why doesn't ready sliced bread feel and taste the same as shoo bought

It is usually baked in smaller batches sometimes in independent bakeries or sometimes in the supermarket and has less ingredients in it.

The rectangular sliced stuff is made using the Chorleywood method. This makes soft, fluffy bread is quick compared to other methods of making bread and means lower protein flour can be used. All of this affects the flavour and texture.
