Really struggling for meals during the week. I need some inspiration
I'm a veggie. DH doesn't really like chicken but DS does. DS is 2. I work full time and don't get home from work until 6 most nights (I mainly cook everything)
Can you throw some inspiration at me with some quick meal ideas please?
Pref cheap too. Wasting a lot of food each week

Pasta tortellini and sauce
Roasted veggies - add chicken for those that will eat it. Serve with cous cous
Stir fry and noodles or rice
Halloumi burgers and chips
Baked feta and tomatoes -serve with pasta

My kids don't really eat it but I cook chicken for them, and leave out sweetcorn, tomato, sour cream and grated cheese for them to build their own Frankenstein fajitas.

Black bean fajitas, can add chicken if wanted. Chop up any veg you have in, add to frying pan/wok/pan, add black beans and spices, less than 10 mins cooking and put on wraps with grated cheese and salad.

Chickpea shwarma wraps (just make the chickpeas at the weekend so they're ready) Check out the love and lemons recipe on line and leave out all the faff bits.

Pasta with sundried tomatoes (just chop up a jar of them, use scissors for speed) Add to a frying pan any veg you have in, a can of chopped tomatoes, mixed herbs and garlic, serve with pasta and mozzarella and basil.

Simple

Corn on cob rubbed in olive oil, paprika and salt

Cook in oven 180 for 30 mins

Sprinkle on Feta and lime juice after

Omelettes, with whatever fillings suit.
Baked potatoes with beans, cheese and salad, or with veggie chilli.
