Cous cous recipe

I recently made a cous cous dish for the first time, always had in my head I hated it but it was delicious. I made it with pesto, halloumi and courgettes.

Anyone have any tasty recipes they could share, there's thousands on Google so don't even know where to begin.

It's lovely with roast veg and a harissa dressing.

I also like it as a cold salad with oil and lemon as the dressing and feta, mint, cucumber, olives.

Morrocan chickpea couscous salad. I will attach pic of recipe but I’m afraid I’ve no idea where I got it from! Printed it off from some website. It’s delicious and I do it often.

I do it with toasted pine nuts, dates, zest and juice of a lemon, a glug of olive oil and then chopped mint scattered through just before serving.

We mix it with tomato purée and veg stock (make it sloppier than usual) and then stuff it in pre boiled red peppers (boil for 5 mins just to soften) and then roast them in the oven with cheese on top. Lovely!
